  • MOULIN-À-VENT, BEAUJOLAIS CRU The Moulin à Vent is called the King of Beaujolais. It is the wine with the longest ageing potential and the closest to its Burgundian neighbors. The blend of the three parcels of this cuvée makes it a complete and balanced wine: Rochegrès brings finesse, Roche Noire vivacity and fruit, La Rochelle power.

    Appearance Deep ruby with purple highlights. Nose Intense, red fruit aromas, floral and mineral notes, smoky, spicy. On the palate Fine and distinguished, ample, round and fleshy attack. Muted tannins with smoothness, velvety and smooth texture. Good aromatic complexity.

    Pairing All red meat and poultry. It goes very well with morel dishes.

    Vines 1 hectare plot of Rochegrès + 2 hectares plot of La Rochelle + 1.5 hectares plot of Roche Noire for the purchase of grapes. Various granites with manganese. Reasoned cultivation, cup pruning, manual harvesting at full maturity.

    Wine-making process Traditional Beaujolais semi-carbonic with two pumping over per day, maceration for 10 to 12 days in vats, no yeasting, no chaptalization, minimum SO2. Ageing: 6 to 8 months 50% in tuns and 50% in pieces from 1 to 5 years.

    Alcohol 12.5%

    Ageing advice Up to 10 years. Apogee: between 3 and 7 years old.
