BEAUJOLAIS A rare and atypical vintage for a Beaujolais. Pierre-Marie Chermette chose a powerful and rich vintage of old vines and kept it in the cellar until April. The subtle notes of wood blend with aromas of very ripe red and black fruits. The palate is long and smooth... A delicacy.
Appearance Deep colour, shades of fuchsia with bright purple highlights. Nose The subtle notes of wood blend with pure and intense fruit. On the palate Concentrated palate, red and black fruit coulis with candied notes, fleshy and sweet texture, long length.
Pairing « Lyonnaiseries », andouillette / roasted rabbit / red meats rare or in sauce / game birds / grape thrushes / chocolate desserts.

Vines 1 hectare of century-old vines in Saint Vérand on granitic soil and 1 hectare of old 100-year-old vines in Vaux en Beaujolais (known as Clochemerle) which is located in the Beaujolais Villages appellation, on a black granite soil. Reasoned cultivation, cup pruning, manual harvesting at full maturity.
Wine-making process Traditional Beaujolais semi-carbonic vinification with two pumping over per day, 7 days maceration in concrete vats, no chaptalization, minimum SO2. Maturing: 6 months 50% in tuns and 50% in pieces from 1 to 5 years.
Ageing advice Peak 3 to 5 years.
Serving advice Serve chilled at 13-14°C.
