Soil tillage We practice mechanical weeding with a plough. All the work on the vine is done by hand.
Wine-making process Fermentation takes place in vats or barrels with complete elaboration in barrels for some vintages.
Ageing process We require a minimum of 24 months' rest in bottles up to 8 years for our vintages and disgorging with ice followed by a rest of up to 2 years before our vintages are marketed.

CHAMPAGNE The world’s most famous sparkling wine, champagne, is ideal for every celebration. The Champagne vineyards and their hillsides are listed as a UNESCO World Heritage site. Everything begins with a specific area of land which,thanks to human talent, produces the most original of wines. This talent ensures that the delicate characteristics of the land are expressed in champagne’s sublime effervescence. The same word to designate a region and the wine where it was born. Champagne only comes from Champagne. Defined by a law dating from 1927, the area eligible to produce origin-approved (AOC) authentic champagne covers 34,000 hectares. The vineyards are divided into four large regions: Montagne de Reims, Vallée de la Marne, Cote des Blancs and Cote des Bar.
PINOT NOIR, PINOT MEUNIER, CHARDONNAY The Champagne vineyard today is predominantly planted to the black Pinot Noir and Pinot Meunier and the white Chardonnay. Other approved varietals are together less than 0.3% of plantings. The PINOT NOIR accounts for 38% of planting. It is the predominant grape variety on the Montagne de Reims and the Cote des Bar. It is the Pinot Noir that adds backbone and body to the blend, producing wines with distinctive aromas of red berries and good structure. The PINOT MEUNIER accounts for 32% of planting. This robust grape variety is particularly well suited to the more argillaceous soils of the Marne Valley. The Pinot Meunier adds roundness to the blend, producing supple, fruity wines. CHARDONNAY accounts for 30% of plantings. The Chardonnay is king on the Cote des Blancs, yielding delicately fragrant wines with characteristic notes of flowers, citrus and sometimes minerals.
