  • CHAMPAGNE Maturity, power and gastronomy. At the table, its creamy texture will go well with fatty fish in sauce (salmon, monkfish, cod), long-cooked white meats (poached poultry), sweetbreads, foie gras in brioche and cheeses with washed or flowery rind. It will satisfy the most demanding amateurs.

    Appearance The color of this cuvée is golden, bright and deep. It evokes maturity and fullness. A rather calm effervescence feeds a light cordon of foam. The visual presentation of this cuvée is calm and serene. It invites to rest. Nose The nose, of medium intensity, also shows a certain maturity. Spring flowers are combined with bread, honey and dried fruit. From the outset, the expression seems to be successful. With aeration, butter, hazelnut and red berries enrich the character. After ten minutes on the flute, the tertiary notes of ageing and spices underline the complex and fine nature of this wine. Later still, notes of meat juice appear. This nose combines primary, secondary and tertiary aromas and testifies to the art of blending in Champagne. On the palate The attack on the palate is fresh, then immediately the body of the wine imposes itself with majesty. Wide and full, it completely covers the mouth with a creamy effervescence. In the background, we can see the support of the acidity and the roundness of the dosage. Creamy from start to finish, champagne develops its intensity without weakness and with more and more warmth and grace.

    The finish is structured by light tannins and a refreshing minerality. Then it is the acidity of the wine that takes over for long seconds of aromatic persistence. The RESERVE cuvée finishes its journey slowly and calmly, giving an impression of freshness and purity.

    Pairing At the table, its creamy texture will go well with fatty fish in sauce (salmon, monkfish, cod), long-cooked white meats (poached poultry), sweetbreads, foie gras in brioche as well as cheeses with washed rind or flowery rind (not too strong though). He will also be able to attract conversation and satisfy the most demanding connoisseurs for an aperitif of oenophiles.

    Ageing advice This cuvée evokes maturity, power and gastronomy. Do not hesitate to serve it between 10 and 12 degrees of temperature in a well curved flute or even in a wine glass so that it expresses all its qualities.

    Serving advice Dynamic, elegant, persistent, let it live in a rather ample flute at about 10 degrees of temperature.
