CHAMPAGNE The cuvée Prestige will be welcome as an aperitif. If you choose to serve it at the table, choose seafood products such as grilled fish, fish terrines, hot oysters. Look for agreement with dishes with firm textures, with a good level of salt.
Appearance The color of this Cuvée Prestige is luminous. Light yellow, it is animated by a cloud of very fine bubbles that generate an abundant foam on the surface. Nose The nose is aromatic. At first, it is delicately expressed on citrus fruits, almonds and minerality. Aromas of dried fruit, apricot kernel and fresh cream provide it with substance. After ten minutes in the flute, the apple, fresh butter and a few floral notes confirm the good hold of this wine, at the very beginning of maturity, but still full of youth. On this subject, the "air resistance", after thirty minutes in the glass, is excellent; the wine does not weaken (aromas of lemons and wheat). On the palate The attack in the mouth is precise, rather pointed, with a "crunchy" impression, linked to the effervescence. Then the body of the wine manifests itself. Fat and alcohol are always accompanied by effervescence and acidity. It is a complete wine whose dosage can barely be guessed in the middle of the mouth. Wide and taut, it will lengthen to the finish with harmony, offering a fairly firm texture, full of freshness and minerality.
The finish is the exact extension of the impression left by the mouth. Harmonious and very long (more than 8 seconds of persistence), it offers with rhythm a minerality and a lemony freshness and punctuates the tasting in a clear and pure way.
